Cherry-Pistachio Chocolate Bark

This chocolicious treat is so easy to make and can be a great gift when going away to a dinner party! Combine the three ingredients below, pop into the freezer for an hour and enjoy!

Fun fact: According to an American study, cherries can counteract muscle soreness by preventing inflammation and tissue damage in fatigued muscles. The study also shows that the antioxidant, which gives cherries its red color (known as anthocyanin), prevents your belly from bloating. Amazing, isn’t it? Pistachios are also healthy as they contain potassium and lutein – an antioxidant that gives you both healthy skin and eyes!

150g chocolate (70 %)
3/4cup unsalted pistachios
1/2cup chopped dried cherries (or cranberries) 

Chop the chocolate into small pieces and place in a glass bowl. Microwave on high for 1-minute or place over hot water. Stir until the chocolate is completely smooth. Add the pistachios and cherries and spread the mixture onto a lined baking paper. Decorate with a few more pistachios and cherry bits (you could also add a pinch of sea salt) and put into the freezer for about 1 hour or until firm. Finally, break the bark into pieces and serve.
