Why buy mayo which contains several ingredients you have no clue what is when you, easily, can make your own?
Mayonnaise is thick and creamy, and goes perfectly with bread, bagels, potatoes and fries! And the homemade version is glorious compared to the jarred stuff! Have fun and happy eating!
120g silken tofu
1 tsp. Dijon mustard (or the mustard you prefer)
1 tbsp. lemon juice (or use 50/50 lime)
40 ml olive oil
50 ml vegetable oil
A pinch of sea salt
Use a blender and add the tofu, mustard, lemon juice and salt. Mix until all ingredients have been combined and you have a creamy and smooth texture. Use a clean bowl and whisk together the vegetable oil with the olive oil. Slowly drizzle the oil into the blender (while running) until it thickens. Finally season with additional salt (or minced garlic or lemon juice). Use an airtight container and store in the fridge (for a few days). Enjoy!
