Tender tomato soup

Try a big bowl of our warming tomato soup. We guarantee that this will make you feel good both on the inside and outside. 

Fun fact: Did you know that tomatoes are in fact a fruit and not an vegetable?! Tomatoes naturally low in saturated fat, sodium, cholesterol, and calories. They also contain fiber and have a high water content, which makes them a filling food. Just like carrots and sweet potatoes, tomatoes contain betacaroten which helps us protect the skin.

Ingredients
2 garlic cloves
1 onion
1kg ripe tomatoes
1 vegetable stock
10 basil leaves
Salt & Pepper
2tsp olive oil

Instructions
Preheat the oven to 200°C and place the tomatoes, onion and garlic cloves in a ovenproofed tin. Drizzle some olive oil and season with salt and pepper (or other spices you like) and bake for approx. 30-40 mins until everything is roasted. Blend the tomatoes in a food processor and add some of the vegetable stock and basil. Use a sieve and pass the soup into a saucepan and finally add the remaining vegetable stock. If you would like the soup to be a bit more creamy, try adding a dash of sour creme. Decorate with 1-2 basil leaves or parsley and enjoy.
