Banana pancakes have recently become my favorite thing to eat during the weekend. The pancakes are gluten-and dairy free and all you need is bananas and eggs and you are good to go! I like to top my pancakes with blueberries, greek yoghurt and cacao nibs or maple syrup. How do you like yours?
1 medium ripe banana
2 large eggs
2tbsp butter or coconut oil
Mash the banana with a fork or use a mixer/blender. Add the eggs and mix until you a have a smooth consistency and everything is completely combined. Melt some butter or coconut oil in a pan and cook the pancakes until the bottoms look nice and golden. Nom nom nom! Tips: Keep your pancakes fairly small as this will make it easier to flip them.
