Smoky burger

In the mood for fast food made from scratch? Why not make your own juicy smoky hamburger with just a few ingredients.

500g quality minced beef
1 large free-range egg
1 tbsp concentrated beef stock
1 tbsp smoke essence (can be found in almost every grocery store)
1/2 onion (nicely chopped)
Sea salt
Freshly ground black pepper
3-4 gherkins
6 good-quality of fresh burger buns
6 slices Cheddar cheese or any other aged cheese
2 heaped tbsp Dijon mustard , optional
2 heaped tbsp Chili sauce or ketchup
150g rocket salad

Chop half an onion and add to a bowl together with the minced beef, beef stock and smoke essence. Crack in the egg and a pinch of sea salt and pepper. With clean hands mix everything well and form into six roundish shapes about 2 cm thick. Put the burgers on a plate and put them in the fridge for bout 5-10 minutes. This will help the burgers to get firm.

Heat up a frying pan for about 4 minutes on high heat. Turn the heat down add butter or rapeseed oil to medium and start frying your burgers. Use a spatula to lightly press them while frying, this will precent the burgers from rising too much. Cook for about 3-4 minutes on each side.

Put the burgers on a new plate and put another plate on top to keep them warm. Fry your hamburger buns for 1 minute in the same pan. Put the burgers on the bun and add a slice of cheese to the, together with the mustard, ketchup and salad rocket. Enjoy!
